We were thrilled to offer our annual seafood class in conjunction with the Healdsburg Wild Steelhead Festival. This year, chef Dustin Vallette, chef de cuisine at Charlie Palmer's Dry Creek Kitchen, demonstrated how to select, handle, store and, of course, cook precious Steelhead Trout. Guests learned about sustainably-farmed Steelhead Trout and other issues related to sustainable fishing practices. Chef Dustin shared restaurant secrets for preparing perfect seafood, including a variety of cooking techniques for a diverse and delicious feast that optimizes your seafood dollar.
